As you can read in the API (
https://api.highcharts.com/highcharts/colorAxis.stops)
Color stops for the gradient of a scalar color axis.
So by default
colorAxis shows a gradient based on stops. If you want want to use
colorAxis without gradient, you should change the stops in your example to something like that:

[0.5, "#ffffff"],
[0.51, "#B5D9EB"],
[0.79, "#B5D9EB"],
[0.80, "#53A7D1"],
[1, "#53A7D1"],
],
By using the same colors on the opposing sides of the spectrum and small distances between the next "color segments" (ex. 0.79 and 0.80) you make sure that there is no gradient visible.
